Flourless Cocao-Coconut Cake

I put a post on Facebook yesterday that had everyone drooling at the mouth.  I was talking about the delicious Coconut and Raw Cacao flourless cake I made.  So, I thought I'd post the recipe here.  

If you have never heard about the glorious wonders of raw cacao (This is not a spelling mistake.  It is cocoa in it's raw form.), then make sure you check back in here, because I plan on writing about the benefits of it soon.  I have been reading a book on the history of chocolate and I was quite honestly blown away by the power of it and nutritional content.  

Did you know that cacao beans used to be used as currency?  An edible money, hmm…

As a chocoholic, I'm always looking for good ways to eat chocolate, instead of the stuff loaded with sugar from the supermarkets.  

I opened up one of my favorite books, Eat Fat, Lose Fat by Mary Enig and Sally Fallon and this recipe was right there…  It was delicious and I'm tempted to make it again very soon!

When you look at the recipe it looks a bit finicky.  There is a bit of a process but it's easy.  I did it with the help of my 15 month young baby strapped onto me in a Baby Bjorn.  He loved watching and helping and I could still manage the whole thing.

Also… if you are reading this and know my husband, Hugh, you know that he is anal about what he puts into his mouth and just doesn't eat chocolate or sweets anymore.  He usually crashes in minutes when he eats any sugar, fruit included.  He had a sliver of this cake (much to my shock) and didn't crash.

Flourless Cocoa-Coconut Cake
7 tablespoons arrowroot powder
1/3 cup sifted unsweetened cocoa powder (I used the raw cacao powder that you would find at some health food shops.  I have personally never seen it at a supermarket. Yes there is a big difference between raw cacao and cocoa in the way it's been processed.)
1/8 teaspoon ground cinnamon
4 egg whites at room temp
pinch of sea salt
3/8cup Rapadura, Sucanut, or Maple sugar (All healthier sugar alternatives than processed white sugar)
4 egg yolks, at room temp
1 teaspoon vanilla extract
1/4 cup rapadura
1 cup freeze-dried course-cut coconut, plus more to top cake (I actually haven't been able to find this in a shop, but you can toast coconut with maple syrup to get the same idea.  In this recipe, I just used organic desiccated coconut and it came out yummy and with less sugar and took less time.)
2 cups whipped coconut cream

Preheat oven to 350F (about 180C).  Butter a 9in springform cake pan and dust with arrowroot.  Sift together arrowroot, cacao, and cinnamon.  IN a very clean glass or stainless steel bowl, beat egg whites with a pinch of salt until frothy.  Gradually add 3/8 cup sweetener.  Whip whites until glossy and smooth.  Set aside.

In another bowl, beat egg yolks with vanilla until pale in color, about 3 minutes.  Gradually add 1/4 cup sweetener and beat until yolks are pale and a thick ribbon falls from the beaters, 6-7min.

With a rubber spatula, fold about 1/3 of whites into yolks.  Sprinkle about 1/4 cup of dry ingredients on the yolk batter and fold gently.  Continue to alternately fold in egg whites and dry ingredients.  Finally quickly fold in the coconut.

Turn batter into prepared pan, gently smooth top and place in oven.  Bake 30 min, or until cake pulls away from the sides of the pan and middle springs back if gently pressed.  Let cool on a rack about 10 min.  Release sides and wait another 10 min before removing cake.  Place on a serving plate and chill well.  (I didn't chill it).  Ice with whipped cream and gently press coconut on top.

To make the whipped coconut cream…
It's meant to whip like dairy cream, but takes awhile.  (It was still a bit runny for me after several minutes (like 8min) so I just used it that way and it was still all yummy.  Once I put the leftovers in the fridge it solidified into more of a cream.)

11/2 cups coconut cream
2 tablespoons rapadura, sucanut or maple sugar
1 teaspoon of pure vanilla extract

Place cream in a large bowl and whip with an electric mixer for several minutes until cream thickens.  Add sweetener and vanilla and whip a minute more.

New Year’s Resolution – Lose the Fat

I have a confession to make today. Over the last month, we’ve had a lot of stress in our lives. My husband and I decided to pack up house, move everything into storage and come overseas to the States to stay with my family for a little while. To say the least it was an incredibly crazy, chaotic, stressful month. All while having the holiday and still doing coaching and our business. So, I let some bad old habits to slip back into my life and I really want to come on here and confess to you guys because we are all human. A lot of times I coach my clients and they feel really bad about "slip-ups" and get all guilty and then drop off the band wagon, altogether. They stop losing weight, they get into bad habits again. They think, “Oh god it’s all over”! Well... It’s not! It’s been 4 weeks that I’ve been eating way too much chocolate again. In the past that’s been my way of dealing with stress. I also basically stopped exercising for a few weeks because we just didn’t have time. It was chaotic and we have the holidays so we just wanted to chill out. Now, it’s about a month later. I know what I’ve done and I’ve taken the steps that I needed to take to get back onto my own band wagon. One of the reasons you haven’t heard from me in the last month is because I live in integrity. To me it’s really important that if I’m going to teach you guys stuff and coach, that I’m doing whatever I tell you as well. The videos kind of stopped last month because I think unconsciously, I just couldn’t really pass the word on when I wasn’t fully living what I was preaching. Here I am, back on the bandwagon, doing all I can do hit my next goal. I actually hit my last goal and dropped down to size 10 after gaining the weight from my pregnancy. Now, the goal is by the 7th of April to be down to US Size 6. Here goes guys, I’m back at it. I’m back at the gym. I haven’t stop eating chocolate completely. I have definitely had it a few times in the last few weeks but there are days that I haven’ t had any. I’m getting back on track again. It takes an effort and I’m back on the band wagon. After the holidays and with new year’s resolution, if you had any slip ups, any “ooopses”, you hop back on your bandwagon as well and let’s hit our goals. By the way overseas, we’ve moved to the Palm Springs, California area, for the time being. It’s been a lot of fun being gypsies, hanging out. We are at all sorts of different people’s houses and meeting really amazing new people. So we've got some fun stuff happening and that means you guys are gonna learn some really great new things this year. What’s the Deal with Colonic Irrigation or Enemas?

Have you ever wondered about colonic irrigation or enemas?

Today, we’re gonna uncover the mess behind them.

So what are they? Basically what happens when you do either, is you stick a tube up your bum. Then water goes into the tube, it goes up your colon and basically the concept is then the water pushes all the stuff that builds up in your colon out. Yes, the water that goes in, must come out. Like I said it’s messy but an incredibly cleansing process.

What happens when you do them is like I said when the water goes up into your colon, it’s cleansing the walls of the colon so that you’ll absorb more nutrients. We’ve talk about this before in other places, if you have a build up on your intestine, your colon or all of your digestive system, what will happen is whatever food you’re eating, even if it’s really healthy food, may not actually be absorbed because they’re too dirty. So what you’re gonna do in having either one of these is to clean up your insides so that the walls of your colon are clean so that nutrients can be absorbed.

The end result is amazing! The focus, clarity, energy levels can improve dramatically and headaches may go away. So many problems can be helped by keeping clean insides.

So what is the difference between the two? The difference is when you have a colonic, you go and actually see a practitioner to help you. It’s a bit personal but the equipment is great. What will happen with the colonic versus the enema is that it can actually go deeper into the colon so you’ll have more of a cleanse than what you have at home.

Now, if you want to do it at home because you do not want to see somebody else to help you out or there is no one locally you know that actually does this. Better to do it this way than not at all and you can get an at home kit. You can find it online or at your local chemist or pharmacy. You are looking for a thin tube that you stick up your bum and then sunction the water in. You want to let it run through for about 20 minutes.. When you first start, you may not make it that long. I know I could not do 20 minutes the first time I did it at home . It was just not comfortable at all and well I won't get into the gory details. :) But the end result is phenomenal. It’s worth every moment of it. So stick in there and let the water do its job.

Types of Detox to Kick Start Fat Loss

Have you ever wondered what kind of detoxes there are?

Where do you even start when you want to go into detox?

That’s what we’re gonna talk about today. So if you’ve never done a detox before and this is your first time taking the step to do it, Congratulations! You’re in a great place.

Doing a detox can actually be quite challenging and the first few days is almost always the hardest. Like I said in video, Can a detox help you get rid of belly fat?, at the end of the detox you can feel amazingly cleansed, totally full of focus and you are able to get rid of a lot of ailments that may have been frustrating you.

In order to prepare for a detox, you need to sit and think about how and what you are going to do. There are a lot of ways to do a detox, depending pn your reasons for doing it.
 
First of all, if you’ve never done one and your diet is currently filled woth lots of fast foods, pre-packaged meals, junk, sugar, etc, I highly suggest that you start with at least cutting out the sugar in your diet. What I’m talking about is eating only whole foods. That means NO SUGAR!

When you cut out sugar, you absolutely MUST read the ingredients on any packaged food you buy. You will probably find that you won't be buying it because it probably has sugar in it, if it's in a package. If you have been eating lots of packaged foods, this exercise will challenge you, but trust me, it's worth it! You’ll feel so much better and clearer when you start eating all whole foods and cut out all the sugar.

Now if you want to take it to another level, sometimes people do liquid detoxes. It lets your body stop having to worry about processing and breaking down food, so it can rest and detoxify everything yucky out. With liquid detoxes, all you do is drink. You’ll juice things. Honestly, you can juice everything. You can juice broccoli, spinach, you can have green drinks, fruit drinks, veggie drinks, carrots, celery, you name it you can juice it.

The most extreme option as far as cleansing goes is to actually have a fast. I’ve done this before and it’s extreme. People do anything from 24 hour to 40 day fasts. If you have not done anything like this before, you definitely want to speak to a health practitioner and make sure you’ve got someone helping you along the way. Fasting isn't about starving yourself for weight loss. (That won't help you or work for your body in the end.) It's about giving your body time to rest the digestive system. It can be done with colonics to really cleanse yourself. Again, please make sure you consult a health practitioner before doing something like this. There are things to do to prepare yourself for it and steps you need to take after the fast for maximum benefit.

More specific detoxes include heavy metal detoxes, liver and colon cleanse. For each of these consult a local practitioner for herbal supplements that can be taken to help cleanse the specific areas of the body that you are focusing on. You can also speak to the practitioner about any ailments you have that may be helped by doing a detox and they will help guide you through the process and give you the best supplements for what you need.

This is just the basics of detox. Please consult a local health practitioner before doing a detox and work with them to make it most effective for you.

What is it? Why would you do it?

At the moment everywhere I turn, someone seems to be promoting, advertising, or talking about detoxification. So today, let's talk about what all the buzz is about.

Before we get into detoxification, I wonder…

How Many Times a Day Do You Go to the Toilet?

If you are not going to the toilet frequently, you are not releasing toxins. I am amazed at how many people think it’s ok to spend even one day without going poo! So why is it important to frequent ourselves at the toilet? To EXPEL SH#T! Excuse my language but that’s what you are doing!

Food is a source of energy. Once the body has gotten what it needs out of the food, then the rest needs to be eliminated. When you don’t eliminate it, then you get a build up of toxins in your body and your colon. The toxic build up can actually cause decay in your body. This decay can attract viruses and bacteria and all sorts of yucky bugs to the area. When the yucky bugs are there many of the good bacteria that keep our system clean, gets killed off.

Imagine an animal killed on the street with bugs flying around it and eating it from the smell of the decay. That’s what your insides can start to look like! YUCK! No Thanks! So, in order to keep your insides healthy, you MUST POO! Going to the toilet a couple times a day is a GREAT thing! Also remember that you must drink water to flush out your system as well.

So now that you know how easily we can build up toxins in our bodies, let's talk about detoxification.

A detox is when you get rid of all the toxins in your body. Where do you get the toxins from? Anywhere around you, the food we eat, the things you breathe in, what you drink and I’m talking about even from good sources of food like vegetables, fruits, and meat. You can get toxins from anywhere. When toxins build up in your system they can clog it up. Because of this you may start to feel run down, tired, get sick, have a lack of energy, or headaches. You can even start to get bloated or have extra fat around your body So it’s a great thing to do to in order to clear yourself from all this stuff and actually start to feel better and even get rid of belly fat.

Why would you detox?
Simply… you will feel better! Most people will claim that once they have a detox, they get much more focused, they have clarity, again they’ll start to shed the fat really quickly. It's possible that a detox can help get rid of fat on your belly, love handles, bum, thighs, arms... You may also start sleeping better, and even clear up any indigestion you may have. There’s all sorts of wonderful things that can happen from having a detox.

So over the next few days, we’ll be talking a bit more about detoxes. We’ll tell you some of the ways you can detoxify and also we’re gonna get into some fun stuff about colon cleanses and enimas. It’s an untouched subject that many people don’t talk about but we’re gonna uncover it here.

What to eat for a healthy breakfast…

Do you ever wonder what is a healthy breakfast to eat when losing fat?

You may be shocked when I tell you what we are eating...

When you walk into the supermarket, it can be very overwhelming with the amount of breakfast cereal choices there are. I do wonder who ever thought up the fact that we should eat cereal for breakfast? I mean honestly, why should breakfast be different than any other meal? Why not meat and potatoes, fish, sandwich, etc?

Getting serious... Breakfast should consist of whole foods, like every other meal. Whether it's smoked salmon and eggs or veggies, eggs and bacon, leftovers from dinner (assuming it was made with whole foods) etc...

Also, breakfast should be one of your biggest meals of the day. You need the most energy in the morning to help sustain you throughout the day. Many people get this backwards and eat big dinners. Think about that... eating lots of food when you are about to rest. Your body doesn't need the energy and it takes lots of energy to break it down, so while it's meant to be resting overnight, it's now got to work to break down the food. So... start your day with a big meal and end it with a smaller one.

Now... what do we eat in the mornings that keeps us losing fat? On our plates you will find some fresh greens like kale, chards, collard greens, spinach, and sometimes we have this thing called tatsoi. Our 11 month young loves mushrooms, so we usually have those with zucchini and avocado as well. We also have bacon, eggs and sometimes sausage and/or steak or kangaroo.

The reason why we eat this is because it has whole foods, lots of really fantastic nutrients for us. It’s real food. Plus it’s good to have protein in the morning. It helps sustains our energy throughout the whole day. Some people might need more veggie than what we have on our plate. Overall though, it’s really good to start digging it in the morning actually eating real food. If it were up to me, I’d be skipping the cereals in a box that you can buy in the grocery store and go with something that’s "real".

Some people say that eating breakfast like these that are actually quite high in protein and fat would say that you can’t lose weight eating breakfast like that. Let me just tell you both of us are down quite a lot of fat on our bodies. So far I’m up to 12 and a half centimeters gone from my waist and about 11 centimeters from my hips. Hugh’s down 14% body fat in the last few months and this is the type of food we eat every single morning. So, yes, it is possible.

Do you ever have floating poo or pebble poo?

So after Part 1 of What your poo is tell you, you came back for a bit more fun and heaps more insight.

Here are 5 more poo descriptions to contemplate...

Floaters Vs. Sinkers


It can be so embarrassing when you are at a friend’s place or a public toilet and you turn around to see your poo floating. You flush the toilet and it doesn’t go down. You think to yourself, “Oh No! Please go down!” You flush again and start to run out of water and flushes. Luckily this time it goes down. Don’t you hate it when it doesn’t and you leave it floating there for the next person to find?

Why does that happen? It’s most likely due to gas and fat in your diet. You may have noticed at the same time that you are also farting a bit more than usual. Next time you go to eat the 3rd burger from McDonald’s you may want to think again!

A little something you can try if this does happen to you… Put extra water in the toilet. This should give it a bit more force to flush the floater down.

Beer Bog


Need we say more? If you have had a big night out and have woken up with a hangover, this is most likely the result of your drinking. It will often be semi-solid, have stomach pains as you pass it and will have the smell of the bar that you left at 4am.

This occurs because your body wants to eliminate the toxins quickly. The process of creating the poo is sped up and not all the liquid is absorbed, resulting in runny poos.

Pebble Poo


These are frustrating. You have just sat down and worked to get out your poo only to see little pebbles in the toilet when you have finished. It is so anti-climatic.

The very simple solution to this is to eat more fibre. The lack of fibre in your diet is allowing for a lack of production of a sticky substance that holds your poo together.

Log Jam


Otherwise known as constipation. You sit on the toilet with pains in your stomach and gas and a desire to poo, but nothing comes out! How unrewarding and unpleasant.

Up your intake of water and fibre. If this persists, you may need to get a colonic to flush out your system and unblock what you have been building up. Look for a well-trained practitioner in your local area. And check out my article on cleansing if you want more information about colonics.

Ring Of Fire


As you sit down to have your comfortable poo, you are unpleasantly surprised by a burning sensation that makes you think your bum is on fire. The likely cause for this is chilli or other spicy foods. Think about it, it probably felt the same way going in as it did coming out!

See… Poo can be fun! My husband and I talk about our poos most days. (No, I’m not lying!) We definitely celebrate the majority of the days that we have those perfect poos that come out nice and easy, leave no smell and are clean to wipe. I love those ones!
